Still canning!


So here it is mid November and I am still canning! For me it is so worth the work to look in my garage and see my shelves filled with wonderful things to eat! This week it was Beef and Chili. My wonderful Brothers provided us with a half a beef last year and this year when we went to get it there was still some in our freezer so we decided (since there wasn't room for both) we would can it! I say we but I mean ME! So all week I have made several HUGE batches of Chili with what was left of our stew meat and then caned the few roasts that we had left plain. They will make yummy meals latter! It isn't the prettiest thing in a jar but to me one of the most useful. I can make a whole dinner from what is in there, not just a side or dessert! So it is totally worth it! My only complaint is that canning beef takes FOREVER! Not literally because actually it is much less work in the prep area. But they have to be in the pressure caner for 90 minutes plus who knows how long coming down from pressure before you can even touch them! Oh well my work is finally complete! (Until next year that is!)

How does the beef turn out when it's been processed this way? Is it already cooked, so you just warm it up later? Does it "fall apart" like after it's been cooked in a crock pot? How long can you keep it on the shelf?

I wanted to comment on your post about special grandmas too. Having a picture of grandma is such a good idea and I am so impressed she thought of it. Hey we are scrapbookers we know the value of a photo...right!!! Avery has one in her room of my mom and just last night Bodie even recognized my mom in it. He keep pointing to the shelf it was sitting on. Avery started crying the other day, just out of the blue, huge tears, rolling down her face..."I miss grandma." We called her right away. Your post was so sweet and a reminder of that strong and special bond that grandparents have with their grandkids.

The beef when pressure canned is fully cooked an yes fall apart. You can eat it cold right out of the can, but I prefer meat warm! I have had lots of people tell me yummy things to do with it out of a can, shreaded beef sandwhiches, hot beef sandwhiches with gravey, quick stews and soups.... I better stop I am already hungry! But it keeps for just as long as anything you can does. If you store it in a dry place. YEARS! as long as it sealed properly this is the best way to add meat to food storage!
