Here is the winning recipe by Allison Bevans!
2 chicken breads shredded (I used canned this was faster)
1 can black beans
1 can corn (I used frozen since I don't buy canned)
2 cups monterey Jack, pepper jack, or Cheddar cheese
Then in the food processor put 1 cup spinach
1 green or red bell pepper
1/4 cup cilantro
2-4 T chili powder (depending on how spicy you like it, we used 4 and it wasn't hot!)
1-2 T cumin
1 T lime juice
1tsp salt
Chop till all combined
Mix with the chicken mixture
Put scoops of the filling into tortillas and shallow fry them. (use toothpicks to hold them together) Just fry till brown on both sides. For a healthier option they can also be broiled in the oven till crispy. (we tried both ways and I prefer the broil method because my tummy doesn't like fried things very well.)
The dip is a MUST!!!
1 avocado
1 cup ranch
2tsp lime zest or lime juice to taste.
I just cut the avocado in half and smooshed it out of the peel into the ranch and stir all the ingredients together. YUMMY!!! Enjoy.

I was robbed! I should get extra credit for all the years of cooking demos and recipes! I demand a recount!
Ok so my mom techincally gave me all (or most) off the great recipes we already use all the time including the one she entered! So she should get some credit too... There for I will make an extra prize for her!

I'd like to thank my mother, for her patience in teaching me the most basic of cooking skills, and for helping me figure out the recipe for the southwestern eggrolls after eating them at Chili's. I'd like to thank the chefs at Chili's for coming up with such an amazing combination of ingredients. And the internet for hosting other people's variations on the Chili's eggroll of which I used to influence my own concoction. Last of all, I'd like to thank Sophie and Claire, who are the ONLY other ones in my family who like them! (unbelievable, right? but hey, more for us.)
Sorry Kelli! I did get your recipe and I have to say it is one I use all the time! Already! We loved it and I did make it but it wasn't new enough to my kids to stick in their brains as a winner. It was yummy though! I loved Julia's too they were all very yummy! Great acceptance speech Allison I expect a blog entry on the prize unless you have eaten it all already!
