Update

I figured Thanksgiving is over I should probably put a new post up.... I would show pictures of our Thanksgiving day.... But to be perfectly honest. I didn't take any. I know all of you scrapbookers out there are gasping! But to keeping with the honesty thing I never take pictures at Thanksgiving. I don't enjoy pictures of people eating and pretty much that is all we do on Thanksgiving. I know I could take pictures of the food, the family.... but it just happens to be one of those things that I just haven't ever scrapbooked. I usually do some of the events that surround the holiday, like crafts with the kids and stuff like that but I don't think I have ever scraped the actual day! It was a nice day filled with the smell of pie and turkey cooking in my home! The kids watched the whole parade on tv, and then we packed everything up and took our food to the church to spend the rest of the day with Larry's family. There were more then 30 people there and the food was yummy! One of the funny things that happened was for the whole week leading up to Thanksgiving I had been working on a Pinata. A couple times a day I would add a layer of newspaper.... The night before It wasn't all the way dry and I wanted to decorate it so Larry and I figured let's put it in the oven at the lowest temp to dry it up. This would have worked perfectly IF we had popped the balloon first!!!! Instead the air expanded, the balloon grew and the pinata now looked as though it had already been hit by a bat repeatedly!!!! So It had a giant tear down the middle. NO WAY to fix it. We talked about duct tape (don't laugh!) But figured we would run by the grocery store on our way to our friends house just to see what they had. They had this really cute Chickie pinata I figured I could turn it into a turkey easy enough. So I ended up cutting some big turkey feathers out of card stock and stapling them on to the chicks bum! (poor Chickie!) Anyway it was going to be a great turkey now it is only a great story.... kind of like our first Christmas tree in this house and the STUPID dog that is afraid of the vacuum..... that is another story for another time. But OH I wish I had it on video. I might have been $10,000 richer! Anyway it was a fun weekend and we got to have a nice visit with Larry's older brother Lance and his family. I actually enjoyed the long weekend and a few days of sleeping in. Now we are on to Christmas decorations, shopping, and planning fun parties, and events for the kids! Oh and my BIG birthday. Not that there is any planning involved in that one but I had to mention it so that everyone would know there is only 17 days left to shop (ha ha ha). I have so much to be thankful for maybe I should have done a blog on that.... I think I did last year. So oh well just know that I am truly blessed and I know that everything I have is because the Lord gives it to me! Happy Holidays!
Oh I will share a couple recipes here that I have fallen in love with! I made Pumpkin Pancakes for Halloween and for Thanksgiving morning! They were so yummy!

Pumpkin Pancakes
2 cups flour
3TBSP brown sugar
2tsp baking powder
1tsp soda
1tsp allspice
1tsp cinnamon
1/2tsp ginger
(I substituted the spices for 2tsp of pumpkin pie spice!MMMM)
1/2tsp of salt
1 1/2 cup milk
1 cup pumpkin
1 egg
2 TBSP oil
2TBSP vinegar
Mix and cook on the griddle
I love these and I am not a huge pumpkin eater!!!! My kids love them too. My friend Alex had one at my house and she liked them too... so kid tested mother approved! :)
Then you say Hey what do I do with the left over Pumpkin in the can (I always buy the big cans) Here is my most favorite thing right now and it is the perfect follow up since it finishes up the can of pumpkin!
Pumpkin Muffins (Or bread)
4 eggs
1 cup oil
2 cups of Pumpkin
3 cups flour
2 cups sugar
1 tsp vanilla
2tsp Baking powder
2 tsp baking soda
1/2 tsp salt
1 cup chopped nuts
(I don't add these because I think nuts are yucky in most things!)
1 bag chocolate chips
(This is the key ingredient!!!MMMMM)
Mix wet ingredients and dry separate then slowly add dry to mix
Bake at 350 deg for 45 min for loaves (makes 2) or 20-25 min for muffins.
I make these in my mini muffin pan and they are soooo yummy! Perfect for snacking!
Try them and let me know what you think!
